Buffalo Chicken Game Day Sliders

There doesn’t have to be a sports game on for me to enjoy all things buffalo, but its always fun when the two coincide! I took my love of buffalo and created these cute, delicious buffalo chicken sliders. They pair perfectly with a ripe avocado, some ranch, and the 7 Grain Sprouted Dinner Rolls from Angelic Bakehouse. I tried their sprouted grain products about a year ago and become obsessed. Not only do they taste wonderful, but they have amazingly clean ingredients. I knew I had to create something fun with these dinner rolls, and I sure do love a slider!

The buffalo chicken sliders are packed with flavor, spice, and even a little cheese for good measure. I use a goats milk cheese in the recipe, but you can definitely use blue cheese if you are a fan. The toppings are customizable and the recipe itself could not be easier to whip up. My recommended toppings are avocado, extra buffalo sauce, ranch (I like Sir Kensington’s brand), coleslaw, tomatoes, etc.

If you just want to make the meat patties and not the sliders as a whole, that works too! The mixture can be rolled into meatballs to enjoy. I love pairing them as meatballs with spaghetti squash, ranch, and broccoli. You can also leave out the cheese if you cannot tolerate dairy; they will still taste great! I love a customizable recipe and want to be sure that I always share options with you guys.

Buffalo Chicken Game Day Sliders

Ingredients
  

  • 1 lb ground chicken
  • 3/4 cup almond flour
  • 1/3 cup green onion, chopped
  • 2 cloves minced garlic
  • 1/3 cup buffalo sauce + extra for drizzling
  • 1 tbsp chopped yellow onion
  • 1/2 tsp oregano
  • pinch red pepper flake
  • pinch sea salt
  • 1/3 cup goat cheese crumbles can use blue cheese
  • 1 egg
  • 1 package Angelic Bakehouse 7 Grain Sprouted Dinner Rolls

Instructions
 

  • Preheat the oven to 400F.
  • Combine all ingredients in a large bowl and mix well.
  • Form into small, 1 1/2 inch sliders and place on parchment paper on a baking sheet.
  • Place in the oven and cook for around 16-17 minutes.
  • Let cool, coat with more buffalo sauce and serve on the Angelic Bakehouse dinner rolls!
  • Top with toppings of your choosing. I like ranch, avocado, more cheese, coleslaw, tomatoes, etc. Have fun with it!

Slow Cooker Buffalo Chicken Dip (Df)

I’ve been loving my slow cooker this season – the idea of throwing ingredients in and having a delicious, low labor meal at the end of the day always amazes me. I could have a nourishing soup every day if I could, but I thought it would be fun to share something a little different with it for you guys to enjoy. This simple Buffalo Chicken Dip recipe is one of my absolute favorites! There is so much you can do with the end product and it will surely please your pickiest of eaters. Bring it to your Super Bowl party this year and I bet you no one knows that its dairy free! It surely feels like the Super Bowl year round in my house when this dip is on the menu. 

All you need is three ingredients, a slow cooker, and some time and you’re all set! I use Butcher Box chicken breasts and love how they are so high quality and humanely raised. Frank’s Red Hot Original sauce has always been a favorite of mine, and not to mention its Whole 30 approved! The Kite Hill almond milk cream cheese adds the perfect touch and flavor; I love incorporating it into a variety of my meals in some way.

Slow Cooker Buffalo Chicken Dip (Df)

Ingredients
  

  • 2 chicken breasts I use Butcher Box
  • 1/2 cup Frank’s Red Hot Original Sauce
  • 1/2-2/3 cup Kite Hill Almond Milk Chive Cream Cheese can use regular if not dairy free!

Instructions
 

  • Put the chicken breasts in the slow cooker with the Frank's Red Hot for 4-5 hours on low. Make sure the sauce covers all of the chicken.
  • Once the chicken is cooked, shred it with a fork and mix with the Kite Hill cream cheese. You can use more or less of the cream cheese depending on how creamy you like it! 
  • Serve and enjoy! I love dipping celery, carrots, and crackers into it. It is also great stuffed in a sweet potato, on a taco or sandwich — the opportunities are endless!

Turmeric Roasted Cashews

My favorite kind of snacks are those that are easy to bring with me wherever I go! With a busy work schedule, healthy hacks like these are vital in order to having successful days. These roasted cashews are one of my favorites to prepare – they have the perfect roasted flavor. Don’t like the taste of turmeric? The sesame oil and seeds are really the star of the show here, all while getting the anti-inflammatory benefits of the turmeric behind the scenes. I love to keep a bag of these with me on the go for an emergency bite. Happy snacking!

Turmeric Roasted Cashews

Ingredients
  

  • 2 cups cashews
  • 1 tbsp sesame oil
  • 1/2 tbsp ground turmeric
  • 1/4 tsp Himalayan pink salt
  • 1/4 tsp black pepper
  • 1 tbsp sesame seeds
  • 1/4 tsp cayenne pepper optional if you like spice

Instructions
 

  • Preheat the oven to 350F.
  • Roast 2 cups of cashews tossed in the sesame oil for 5 to 10 minutes.
  • When finished, put them in a bowl that does not stain easily and mix in the turmeric, salt, black pepper, cayenne pepper and sesame seeds.

3 cups organic brown rice cereal⁠
1/3 cup honey or maple syrup⁠
1 1/2 tbsp coconut oil⁠
1/2 tsp vanilla extract⁠
1/4 tsp sea salt⁠
3/4 cup creamy peanut butter⁠
⁠
for the white chocolate coating:⁠
1 cup @paschachocolate dairy free white chocolate chips — i get mine from @thrivemarket⁠
1 tbsp coconut oil⁠
all of the @watkins.1868 sprinkles — i get mine at @sprouts⁠
⁠
1. heat the creamy pb, honey or maple syrup, and coconut oil in a pan on low until everything is combined. make sure not to overcook/burn. stir frequently.⁠
2. in a large bowl, add your organic brown rice cereal and then top with the peanut butter mixture. stir until everything is evenly combined.⁠
3. add in the vanilla extract and sea salt and stir until combined.⁠
4. put everything in an 8x8 baking dish and smooth with a spatula until the top of the mixture is uniform.⁠
5. put the white chocolate chips and coconut oil in a pan on low, stirring frequently until combined and melted. make sure not to overcook/burn this as well.⁠
6. top the cereal mixture with the chocolate and spread evenly. then top with the sprinkles.
7. put in the fridge for 60 minutes. take out and let it sit for 5-10 minutes before cutting & enjoying. can top with additional sea salt flakes if you'd like!⁠

sauteed arugula in avocado oil, salt, and garlic. i had a cooked sweet potato in my fridge that i mashed up with the truffle honey salt and i added both to a @sietefoods cassava tortilla. add a little goat cheese or feta and cook the quesadilla in avocado oil on both sides until golden.⁠

my favorite way to start the day is with a nutriti my favorite way to start the day is with a nutritious smoothie packed with all the greens, that tastes like a milkshake of course! my 'thin mint' smoothie is super energizing, filling, and tasty, and i have been stepping it up a notch lately with a scoop of @paradiseherbs orac energy greens. it contains over forty organic ingredients and has the antioxidant power of more than 24 servings of fruits + veggies. there's something super satisfying about getting in an abundance of greens + nutrients all before noon! it gives me so much energy and starts my day on the best note.  thin mint smoothie:
1 frozen banana
1 scoop @paradiseherbs orac energy greens
1 cup cashew milk
1 big handful of spinach
1 dash peppermint extract
2 tbsp cashew butter
2 tbsp cacao nibs
1 scoop vanilla protein powder
optional: tsp of matcha  blend it all up and enjoy! i like to top mine with extra cacao nibs + hemp seeds. take with a serving of @paradiseherbs vitamin c + multivitamin which help keep my immune system strong, strong, strong — so important during these times. link in my stories to shop their amazon page. hope you have the best day 🤍

for the mug cake, i used the following recipe adapted from @plantbasedrd:⁠
- 4 tbsp almond flour⁠
- 1 tbsp coconut sugar⁠
- 1 tbsp @tejariandco plant based vanilla protein blend⁠
- 1/2 tsp baking powder⁠
- 1/8 tsp pink salt⁠
- 2 tbsp @georgiagrinders cashew butter⁠
- 1/4 cup almond milk⁠
- a dash of vanilla extract⁠
- 2 tbsp @enjoylifefoods mini df chocolate chips⁠
⁠
add all of the dry ingredients and mix. add in the nut butter and nut milk and stir. fold in the chocolate chips and microwave for 1 minute and 30 seconds to 2 minutes. top with extra chocolate + sea salt & enjoy! hope you all have the best tuesday.⁠
